We Are The Many: Refugee Week
2024
Rice, a global staple, becomes the centrepiece for a sensory exploration of collective culture. With over 40,000 rice varieties in the world - all with different farming conditions - its cultivation has shaped cuisines, communities, and agricultural industries. Through an edible installation visitors are immersed in the Rice Theory of Culture. This theory proposes that rice farming fosters more collectivist societies.
Accompanying dishes are created by chefs Carol Puthussery, Najeem Ebadi (In The Mix), Seeds of Wild, and sisterwoman vegan – whose menus are drawn from Palestinian, Afghan, Caribbean and wellness-focused cuisines. Each plate tells a story of migration, memory and shared roots.
